Simple Strawberry Cobbler Recipe with Freshly Milled Flour

I love how this simple strawberry cobbler recipe comes together in just a few minutes but can feed a crowd. When you’re done with supper and your family asks “What’s for dessert?” you can throw this together without much thought. It’s a crowd pleaser, for sure! Made with delicious whole food ingredients like freshly milled flour, sweet and juicy strawberries, and real butter, you will want to keep this recipe handy. My family loves all kinds of cobbler. When they start smelling juicy berries cooking on the stove, they wander in the kitchen, and with hopeful expectation they sweetly ask if I’m making cobbler. I get the best hugs when I say ‘Yes’!

Customizable – You can easily swap the berries for whatever you have in your fridge, freezer, or pantry! I’ve made this cobbler with fresh and frozen strawberries, frozen blueberries, frozen blackberries, and frozen cherries. Canned fruit pie filling (any flavor) also works.

More nutritious – Freshly milled flour is a traditional “alive” food that retains all of the vitamins and minerals that are naturally found in wheat berries (the grain used to make wheat flour). You can feel good about giving this dessert to your family since the star ingredient is fruit.

Ingredients

This simple recipe will make a 9×13 pan of strawberry cobbler. That’s enough for 12 generous servings. I’ll go over ingredient substitutions you can make but wanted you to have the original recipe, too.

Flour – You need 1 and 1/2 cups of flour. Freshly mill 1 and 1/2 cups of wheat berries (all-purpose flour works, too).

Sugar – You need 2 cups of granulated sugar. Use organic sugar if it’s in your budget. Regular white sugar works, too. 

Butter – Use 8 tablespoons (1 stick) of unsalted butter. Use the real thing…no fake or highly processed ingredients.

Strawberries – You’ll need 4 cups of fresh or frozen strawberries. They can either be whole or sliced. Alternatively, you can use 2 cans (14 ounces each) of strawberry pie filling.

Baking powder – You will need 2 and 1/4 teaspoons of baking powder.

Sea salt – Use 3/4 teaspoon of a good kosher sea salt. Redmond real salt is my favorite, and I like the fine grain.

Whole milk – You’ll need 1 and 1/2 cups of whole milk.

Tools You May Need

  • Stand mixer with paddle attachment – You can also use a large mixing bowl and spoon.
  • Measuring cups and spoons
  • Medium pot
  • 9×13 baking dish – Glass or stainless steel works great. I also like using baking dishes that have a lid. That way when everyone has had their fill of dessert, I can put a lid on it and stick it in the fridge for later.

How to Make this Simple Strawberry Cobbler Recipe

It’s not hard to make this delicious strawberry cobbler. You basically mix the dry ingredients together, cook the fruit and sugar together, and then combine it all in the baking dish.

This recipe is enough for a 9×13 baking dish. Perfect for your family gathering or to take to a potluck.

Cook the Fruit Mixture

First, preheat your oven to 350°F (180°C).

In a medium pot over medium-high heat, stir together 4 cups of strawberries and 1 cup of the sugar. You can either use sliced or whole strawberries…whatever you prefer. Once the mixture starts boiling, set the timer for 10 minutes and stir occasionally.

There was a lot of strawberry-flavored ice in my bag of frozen strawberries, which I used. Don’t worry if it seems like there’s a lot of liquid in your pot. It’ll all come out right (and delicious) in the end.

Next, put the 8 tablespoons (1 stick) of unsalted butter into your 9×13 baking dish. Set it in your oven so that the butter can start melting.

Make the Strawberry Cobbler Batter

Now for the batter. Pour 1 and 1/2 cups of your favorite wheat berries into your grain mill and grind it on the finest setting you can get. You can use soft white wheat, hard red or white wheat, or ancient grains.

If you don’t have a grain mill, just use 1 and 1/2 cups of all purpose flour.

Next, whisk together the flour, remaining 1 cup of sugar, 2 and 1/4 teaspoons of baking powder, and 3/4 teaspoon salt in a large mixing bowl.

Slowly whisk in 1 and 1/2 cups of whole milk into your dry ingredients, stirring while you add the milk to prevent clumping.

The batter will be very wet. Just be sure to whisk enough to incorporate all the flour. If your batter is slightly lumpy, that’s fine.

Assemble the Strawberry Cobbler in the Baking Dish

Pull out your baking dish from the oven, which should now have melted butter inside. Give the pan a few gentle tilts so that the butter coats all four sides the best you can. I aim to get the butter to go half-way up the pan, but be careful that you don’t dump hot butter on yourself on accident.

It may seem counterintuitive, but pour the batter directly into your hot pan with the melted butter. You’ll add the strawberry mixture on top. As the cobbler cooks, the batter puffs up and rises to the top.

Add spoonfuls of hot strawberry mixture onto the batter. I try to space out the berry mixture at first, and then pour the remaining fruity mixture on top.

Your strawberry cobbler might look like a hot mess, but it will taste oh so good when it’s done cooking.

Bake at 350°F (180°C) for 30 to 40 minutes, or until the crust is lightly golden and firm to the touch.

I usually bake my cobbler for 35 minutes to get a medium firmness, but baking it for a full 40 minutes is just as delicious. If you like a firm crust, bake for the full 40 minutes.

Let your strawberry cobbler rest on the stove for a few minutes to cool down a bit before serving it to your family.

And that’s it! You can serve this cobbler by itself, or with a dollop of whipped cream or serving of good vanilla ice cream. Or all three!

Strawberry Cobbler Recipe Variations

Fruit Filling

As mentioned before, you can substitute the strawberries for other fruit. Fresh or frozen, it doesn’t really matter! Blackberries, blueberries, and cherries are classics that won’t disappoint. If you want to use canned fruit pie filling, use two cans (14 ounces each).

Flour

If you don’t have an electric grain mill, just use all purpose flour. If your family doesn’t handle wheat very well, you can substitute oat flour, almond flour, or coconut flour in this recipe.

Milk

If you don’t have whole milk, use the milk that you have. You can also substitute buttermilk mixed with regular milk.

Serve warm or room temperature, and either by itself, with whipped cream, ice cream, or all three! Store leftover cobbler in the fridge with a tight lid.
