Strawberry Cobbler Recipe

Ingredients

  • cups flour (use 1½ cups wheat berries, freshly ground, or all purpose flour)
  • 2 cups sugar, divided
  • 4 cups strawberries (fresh or frozen; sliced or whole)
  • 8 tbsp unsalted butter
  • tsp baking powder
  • ¾ tsp sea salt
  • cups whole milk

Instructions

  • Preheat oven to 350℉ (180℃). In a medium pot over medium-high heat, stir together strawberries and 1 cup of the sugar. When it starts to boil, set the timer for 10 minutes and stir occasionally.
  • Add the butter to a 9x13 baking dish and place it in the oven to melt.
  • In a large mixing bowl, stir together the flour, remaining 1 cup of sugar, baking powder, and salt. Whisk in the milk slowly while stirring to avoid clumping.
  • Pull the baking dish out of the oven once the butter is melted. Gently tilt the pan so the butter coats all four sides.
  • Pour the wet batter into the baking dish. Then add the strawberry mixture on top.
  • Bake at 350℉ for 30 to 40 minutes, or until the top is lightly golden and firm to the touch. Allow to rest for several minutes before serving. Serve warm or room temperature, and either by itself, with whipped cream, ice cream, or all three! Store leftover cobbler in the fridge with a tight lid.
