This simple pumpkin bread is delicious and a welcome treat around our table. The tender crumb gives way to gooey chocolate that's sure to delight your family and friends. Made with pumpkin and warming pumpkin pie spice, it doesn't just have to be enjoyed in the fall or winter. It's healthy enough for breakfast and delicious enough for any dessert.
1⅔cupflour(if gluten-free, use almond flour, oat flour, or other alternative)
1cupsugar
1tspbaking powder
1tspbaking soda
1tspsea salt
2tsppumpkin pie spice
1cuppumpkin puree(or pumpkin pie filling)
⅓cupavocado oil(or butter)
2eggs(or softened banana or cup of applesauce)
¼cupmilk(or buttermilk or coconut milk)
1cupchocolate chips(or cacao nibs if dairy-free)
Instructions
Preheat oven to 350℉. Grease the bottom and sides of a loaf pan.
In a medium mixing bowl, stir together all the dry ingredients and set aside.
In a large bowl, combine all the wet ingredients and mix thoroughly. Add the dry ingredients and stir until just combined. Fold in the chocolate chips.
Pour into loaf pan. Bake 1 hour 15 minutes or until a toothpick comes out clean.
